Yummy Pad Thai


  • 2 Tbsp Vegetable/Cooking oil
  • 1 Egg
  • 1 cup Shrimp (de-veined and shelled)
  • 3 cups Rice noodles (softened in water)
  • 1 Tsp Paprika
  • 6 Tbsp Tamarind Sauce (Zadihn)
  • 1 cup Bean Sprouts or thinly sliced cabbage
  • 2 stalks Green onions/scallions
  • 1 wedge Lime
  • 1 Tsp Ground Roasted Peanuts (optional)


  • Ground Roasted Peanuts
  • Serve with fresh lime


  • Large Frying Pan or a wok


  1. Poor boiling water over dried noodles until covered
  2. Let noodles soften for 10 minutes. Drain, rinse with cold water and set aside
  3. Heat wok or stir-fry pan until hot at med-high heat
  4. Add oil, then egg and scramble until cooked
  5. Add shrimp and cook until partially done (about 30 seconds)
  6. Add noodles, toss until soft and noodles start to clump together (about 60-90 seconds)
  7. Add Paprika and Tamarind Sauce, stir until shrimp is cooked
  8. Add bean sprouts and green onions/scallions then mix until heated through (about 10 seconds)
  9. Serve with a wedge of lime and roasted peanuts.
